Emerald is the classier and more elegant sibling.  Great with lighter flavours such as steamed vegetables, chicken, fish, lean cuts of meat (pork or beef fillet), dumplings, prawns, scallops, and other types of shellfish (oysters!). Perfect addition to your breakfast of scrambled or poached eggs, avocado on toast, and any savoury pastries or scones. One of our favourite ways to enjoy it is simply on crackers with a soft cheese like Brie!
