Scarlet is considered the naughtier one. Not only does it have more of a spicy kick, it also pairs well with heavier and richer flavours. Think roasted flavours: steak, fatty roast pork (ribs, belly), roast chicken, lamb chops, roasted vegetables, hot chips, nachos, fried eggs, fried rice and of course noodles. Also great on pizza! Great way to finish off the crust with some Scarlet.
